As promised...

MY BABA'S PEROGIES
This recipe makes enough for 6 main dishes or 12-18 side dishes.
Dough: 4 cups flour
2 tsp salt
1 ½ cups hot water
4 Tablespoons oil
Mix together. Knead 5 minutes. Cover and let rest 15 minutes.
Roll out on floured surface. Cut out circles with cookie cutter
or floured glass. Place a spoonful of filling on each circle and
then fold over to form half moon. Pinch edges to seal. Drop into
pot of boiling, salted water. Turn heat down and simmer until they float on top. May be served with fried onions and sour cream. (After boiling they can be sautéed in mixture of ½ margarine and ½ oil in frying pan.)
Filling: 2-3 pounds potatos, peeled and boiled
8 oz cheddar cheese, grated
1 small onion, chopped
2 tsp salt
Mash potatos using enough milk to moisten. Mix in grated cheese, salt, and onion and stir until smooth.
These can be frozen in a single layer on floured baking sheets. Transfer to plastic freezer bag once frozen and use as needed.

I borrowed this book from the library last summer{Death by Chocolate Cakes : An Astonishing Array of Chocolate Enchantments by Marcel Desaulniers} and I tried the Chocolate Heart of Darkness Cakes It is a dense chocolate cupcakes with a molten chocolate-truffle center. It's rich but it's gooood... there are ways to melt chocolate w/ milk in the microwave but I don't recall the exact time you must heat it. I served this w/ a large dallop of whipped cream.

OMG those look really good. I'm so lazy when it comes to baking though. I wonder if it would work with a cake mix and a few dairy milk bars...

I'm sure cake mix would work, but the truffle in the middle is so easy to make and it just melts in your mouth when you eat it

I notice the recipe cake has a really high fat content and a much larger proportion of eggs to flour than a cake mix. I doubt if it would work. Cake mix is much lighter so the filling would probably be aborbed and become dryer.

Family fights over this

Sweet and Sour Meatballs
1 cup brown sugar
2 Tbsp. flour
1/2 c. vinegar
1/4 c. water
2 Tbsp. soya sauce
1 Tbsp. ketchup
Mix together all ingredients, simmer till thick. Then add meatballs.
carefully don't burn the sauce.

I usually cut the vinegar to 1/4c.
Very fast to make, especially if you use the meatballs already made.

Since the season is coming

Pickling
5c. vinegar
1/4c sugar
2 1/2c water
5 tsp pickling salt
1 Tbsp. pickling spice

Combine---boil for 15 minutes.

Great for pickles or eggs.

Thanks for the info Dewcat. I'm not really a baker, so I would never have known that.

I guess if I want the real thing, I'll have to start from scratch!

I don't know of any alternative...I would just omit soya sauce and maybe add another tsp of ketchup. The only thing is the soya sauce give it a dark color....maybe another dark sauce like HP or A1 sauce.

Another meatballs sauce...Love this one too

Gravey for Meatballs
1/2 tsp. cinnamon
1/4 tsp. ground cloves
1/8 tsp nutmeg
beef stock
Add ingredients to stock, and thicken with flour or cornstarch to desired consistancy. Add meatballs and simmer till balls warm
It gives the gravey a different flavour.

If you can't have soya sauce because of the gluten, Tamari is a wheat free alternative. You should be able to find it either in a health food store or an Asian supermarket.

Another option is using fish sauce, but I'm not sure if it would be a good substitute in that particular recipe.
