As promised...
MY BABA'S PEROGIES
This recipe makes enough for 6 main dishes or 12-18 side dishes.
Dough: 4 cups flour
2 tsp salt
1 ½ cups hot water
4 Tablespoons oil
Mix together. Knead 5 minutes. Cover and let rest 15 minutes.
Roll out on floured surface. Cut out circles with cookie cutter
or floured glass. Place a spoonful of filling on each circle and
then fold over to form half moon. Pinch edges to seal. Drop into
pot of boiling, salted water. Turn heat down and simmer until they float on top. May be served with fried onions and sour cream. (After boiling they can be sautéed in mixture of ½ margarine and ½ oil in frying pan.)
Filling: 2-3 pounds potatos, peeled and boiled
8 oz cheddar cheese, grated
1 small onion, chopped
2 tsp salt
Mash potatos using enough milk to moisten. Mix in grated cheese, salt, and onion and stir until smooth.
These can be frozen in a single layer on floured baking sheets. Transfer to plastic freezer bag once frozen and use as needed.
