Creamy Garlic Caesar Dressing
this is the best caesar salad dressing i have ever had
1 pkg (10.25 oz/290g) silken soft tofu*
1 clove garlic, minced
2 tbsp fresh lemon juice
1 tbsp vegetable oil
2 tsp Dijion mustard
1 tsp each salt & granulated sugar
1/4 tsp black pepper
pinch cayenne pepper
1. Using sieve, drain tofu
2. In food processor, puree all ingredients. Dressing can be refrigerated in airtight container for up to two days.
toss with romaine lettuce and croutons!
(*make sure you buy the right size tofu or measure it)
