OK... I never knew this was here.. thanks Carmat...

I have a recipe for a "Cheese Log" ... It's amazing for small get togethers.... family affairs.... Pot Lucks etc... Wonderful with any kind of cracker or biscuit

Cheese Log

2 cups - Grated Sharp Cheddar Cheese
1/4 Cup - Salad Dressing or Mayo
2 tbsp Sweet Pickle Relish ( only if you like relish )
1/2 tsp Seasoned Salt
1/2 tsp Onion Powder

3 Tbsp Minced Green Pepper
1 Tbsp Chopped Roasted Red Pepper
Large Hard-boiled Egg ( chopped )
1/2 cup saltine cracker crumbs

1/4 cup Sesame seeds

Mix first 5 ingredients in a medium bowl

Add next 4 ingredients. Mix well .. Shape into a roll. Wrap in waxed paper. Chill for one hour to firm.

Toast Sesame seeds in a pan for 5 - 10 minutes until lightly toasted. Roll cheese log over seeds to coat. Wrap in wax paper and chill until served.

Makes 2 cups... 36 slices...

I would usually double this recipe if making for more than 8 people...

Your Welcome for the recipe BTW Jahnisha has a killer Salmon recipe that she will not let anyone know ( sorry to put it out there Jahnisha - well no i'm not, I want to know what you put in that fish.. yummmmmmmmm ) I will be on later to post some more.

I am a very basic simple kind of cook, and I am always afraid no one will like my food (that's a whole other thread...need more self-confidence).

I just tried Dewcat's Tortellini Soup Recipe (p. 18 this thread) and it was awesome! I couldn't find the frozen cheese torellini so I substitued with a package of fresh meat stuffed adding it about 10 minutes into the cooking time. At the table I seasoned to taste with a bit of salt and fresh ground black pepper.

Mmmmmmm. Yup - its quick and easy to make and tastes like you spent all day! Thanks for sharing Dewcat!

Hi there!

Just read through this entire thread--YUM!!!!!!

Gonna be brave and post a few of mine here too.

Apple Bread

1 1/2 C flour
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp nutmeg
1 C sugar
1 C chopped, peeled apple
1/4 C oil
1 egg

Mix all ingredients together (will be an awful looking, dry, lumpy batter--if the egg I use is small, I add a splash of water) & pour into a sprayed loaf pan. Bake at 350 for 50-60 min or until the toothpick test works.

I always make double and triple batches of this, as it doesn't last long at all in this house. It also freezes well.

Here's a cookie recipe that seems to be more of a regional thing. I grew up in the southern US where these were as common as bread, but when I moved here and started talking about them, people began to back away from me slowly.

Sinckerdoodles

Cream together:
1 C shortening
1 1/2 C sugar
2 eggs

then add:
2 3/4 C flour
1 tsp baking soda
2 tsp cream of tartar
1/4 tsp salt
1 tsp vanilla

Roll the dough into balls (chill it for a bit if it's too sticky) then roll the balls in a mix of equal parts cinnamon & sugar. Bake for 8-10 min at 400.

The end result is a soft, chewy cookie that's kind of a really rich cinnamon-coated sugar cookie. If yours get too crunchy, adjust your baking time (or if you like crunchy cookies, munch & enjoy ).

This one is a favourite here!

Margaria Pie

Crust:
1 1/4 C crushed pretzels
1/2 C melted margarine
1/4 C sugar

Filling:
1 14 oz can sweetened condensed milk (must be the sweet stuff)
2 tsp grated lime peel (or not--never used it myself)
1/4 C lime juice
1/4 C orange juice
1 8 oz tub whipped topping

To make the crust, combine the ingredients & press into the bottom & sides of a pie plate. For the filling, combine milk, lime peel & juices, then fold in the whipped topping. Spoon it into your crust & refrigerate or freeze at least 30 min.

This works best if the pretzels are crushed fine, but not to powder (not as fine as graham cracker crumbs, if that makes any sense ).

This one's simple & good.

Dump Cake

Drain 1 can pineapple & spread in cake pan

Spread 1 can cherry pie filling over pineapple

Sprinkle 1 cake mix over everything (yellow is my favourite)

Thinly slice margarine or butter and cover cake with these bits

Bake at 350 until browned, 45 minutes or so.

That's it--no mixing, no measuring, just "dump" it in the pan and into the oven.

This is my family's favourite way to use up eggs (like before we leave on holiday). The little fishie has been known to say "Momma, I think we need to use those eggs today--they've been there for awhile now" (the day after they were bought ).

Baked Pancakes

6 eggs, slightly beaten
1 C flour
1 C milk
3 Tbsp melted butter/margarine
1 pinch salt

Preheat oven to 450. Grease a 9x13 pan. Combine eggs & flour in bowl, then add remaining ingredients. Bake for 15-20 min or until puffy. Cut into pieces and serve with favourite toppings (maple syrup, icing sugar, fruit, chocolate chips, etc)

Creamy Garlic Caesar Dressing
this is the best caesar salad dressing i have ever had

1 pkg (10.25 oz/290g) silken soft tofu*
1 clove garlic, minced
2 tbsp fresh lemon juice
1 tbsp vegetable oil
2 tsp Dijion mustard
1 tsp each salt & granulated sugar
1/4 tsp black pepper
pinch cayenne pepper

1. Using sieve, drain tofu
2. In food processor, puree all ingredients. Dressing can be refrigerated in airtight container for up to two days.

toss with romaine lettuce and croutons!

(*make sure you buy the right size tofu or measure it)

Nutritional Info:

Salad w/ dressing & croutons: Calories 572.10, Protein 36.9g, Carbohydrate 23.2g, Fat 37.7g, Calcium 821.1 mg, Dietery Fiber 3.9g

Dressing: (per 2 tbsp/25 ml) Calories 39.8, Protein 1.8g, Carbohydrate 2.0g, Fat 2.8g, Calcium 13.7 mg, Dietery Fiber 0.0g
