CAUTION:

I just hauled my bottle of tamari (Amana Brand, organic, naturally brewed) out of the fridge and it says "made from select organic ingredients including roasted spring red wheat, whole soybeans and coarse sea salt" so proceed with caution SBS and others alergic to wheat - some Tamari may indeed be wheat free but this one clearly is not! Read the labels.

Indian Potatoes, Peas and Cauliflower

2 Tablespoons vegetable oil
1 pound russet potatoes, peeled, cut into 1/2 inch pieces
1 Tablespoon minced fresh ginger
4 cups cauliflower florets, cut into bit sized pieces
1/2 teaspoon salt
1/2 teaspoon ground tumeric
1/4 teaspoon chili powder
1/4 teaspoon paprika
1/2 cup water
1/2 cup frozen peas, thawed

Heat oil in a large non-stick skillet over medium heat. Add potatoes and ginger; saute, stirring, until potatoes are slightly browned, about 3 minutes. Add cauliflower, then salt, tumeric, chili powder and paprika. Saute, stirring, 5 minutes. Add 1/2 cup water, cover and simmer until tender, about another 5 minutes. Add peas and simmer 2 minutes. Season to taste with salt and freshly ground black pepper.

If you like Indian food, you'll love this - its pretty mildly spiced but its easy to ramp up the heat for those who prefer burn. Think I got the recipe from CBC about a year ago.

Soya sauce acts as a flavour enhancer so you can just add salt or for more flavor beef(or other) bouillon. I also think LuLu's recipe looks yummy and I think I'll try in as a change from my usual swedish meatballs.

BROCCOLI & CHEESE SOUP

6 cups water
2 boxes frozen broccoli
2 tsp. salt
1/2 to 1 tsp. pepper
2 tsp. Accent
1/4 cup butter
24 slices Kraft fake cheese
2 cups milk
3 Tbsp. cornstarch mixed with a little water


Cook water and broccoli together for 10 minutes. Add other ingredients and heat until thickened.
It's very rich, but simple to make and got a lot of compliments!

WOW! I'm sure it makes great banana bread, but I used half oil, half melted butter, added one cup of chocolate chips at the end and baked it in muffin pans - made 12 large (paper lined) muffins. Baked 'em about 32 minutes till they passed teh toothpick test. VERY yummy! (I lost my fav banana muffin recipe and so wanted to 'recreate' it. Done! Thanks!

Here's an oldie but goodie from Las Vegas Review Journal

SWEDISH LEMON ANGELS

1 egg
1/2 cup buttermilk (or 1/4 cup milk mixed with 1/4 cup vinegar)
1/2 teaspoon vanilla
5 teaspoons baking soda
1 cup lemon juice (fresh is best)
7/8 cup all-purpose flour
1 1/4 cups sugar
8 tablespoons butter or margarine, melted

Preheat oven to 375 degrees
In a small bowl or 2-cup measuring cup, beat the egg until foamy
Add buttermilk and vanilla, blend well.
Add baking soda, one teaspoonful at a time, sprinkling it in and beating until the mixture is smooth with the consistency of light cream.
Add lemon juice and blend into the mixture. Stir, do not beat (you want it creamy but without a lot of air).
The mixture will congeal into a pasty lump. Scoop it out of the bowl using a spatula and spread it onto a floured surface.
Sift flour and 3/4 of the sugar together. Using fingertips, work it into the egg-lemon mixture. With a floured rolling pin, roll the dough out one-thirty-second of an inch thick and with the tip of a sharp knife, cut the "angel" shapes and twist up the edges to form a shell-like curve about 3/8 of an inch high. Sprinkle on the remainder of the sugar.
Brush each angel with butter.
Place angels 1 inch apart on an ungreased baking sheet and bake for 12 minutes or until golden.


WARNING: You must be an experienced cook/baker and know what you are doing before attempting this receipe!!!!

The Alberta Barley Commission Beef & Barley Stew

2 tbsp canola oil
2 lb boneless stewing beef
1/2 cup pot barley
11 cups water

Per serving:
Energy: 273 calories
Protein: 22g
Fat: 10g
Carbohydrate: 25g
Dietary Fibre: 4g
Sodium: 655mg

Canadian Diabetes Association Food Choice Value:
1/8 of recipe = 1 starch + 1/2 vegetable + 3 protein

This is really easy but tastes like you spent all day. Plus it's a good way to get vegetables into the reluctant.


Tortellini Soup
1 pound ground beef
1 28 ounce can tomatoes
1 envelope onion soup mix
1 or2 cups cut up green beans (can use frozen)
1 package frozen cheese tortellini (9 oz)
1 Tablespoon chopped basil (1 teaspoon dried)
1 medium zucchini, chopped
5 cups water

In large pot brown ground beef and spoon off excess fat.
Add all other ingredients and cook 45 minutes, stirring
Occasionally. Will be thick, like stew.

Does anybody like curry? This is an easy one that i am requested to make often by the otherwise garbage can that is my mate.

Curry

2 TBs sunflower oil
1 tsp mustard seeds
heat oil hot and saute seeds until they pop add:
1 cup of fresh chili leaves (I use spinach when I cant find it)
saute med until shrunk add:
1-2 thumb sized shredded ginger or 1 TBs powdered ginger
3 green chilies seeded and slivered
3 diced onions
6 diced plum tomatoes
1 tsp chili powder
1 tsp turmeric
turn up heat to med-high saute until onion tender add:
1 can of coconut milk OR i pkg coconut cream with 1 1/2 cups warm water
bring to boil and its done.

To add meat, cut chicken or beef in thin strips, add to boiled curry. cook at high temp until center is no longer raw looking. approx 5-10 minutes for chicken or beef.
Will store for 4 days in fridge and will get more flavourful. If more heat (taste) is desired, add another tsp chili powder.

Is this anything like Moxies broccoli cheese soup?? I have tried a ton of different recipes trying to find a match to it and haven't even came close yet. A lot of them taste good but can't seem to get the same taste that Moxies does (I think they might use Cheese Whiz or something in theirs to get it as creamy as it is)..

My latest fave is: Mock Scor Bars
1 cup brown sugar
1 cup of butter ( the real stuff)
2 cups ch. chips

and enough saltine crackers to line a cookie sheet
Preheat to 375 and line a cookie sheet with tinfoil. Grease the foil and then line it with crackers. In a saucepan, melt butter and stir in sugar. Bring to a boil, and stirring constantly, boil for 3 minutes. Pour over crackers and spread evenly. Place in oven until really bubbling( about 4 mins) Remove and sprinkle with chocolate chips. Wait a minute for the chocolate to get all melty and spread it evenly. Pop it in the fridge for 20 min or so, and pig out!! It will peel right off the foil.
