The best chicken recipe ever. No one can screw this up. When I found this recipe I thought it was perfect for people who just are not sure how to tell when poultry is cooked thoroughly but not dried out. Give this a try.

BAKED STUFFED CHICKEN
6-7 lb. chicken
1 cup melted butter
1 cup stuffing
1 cup uncooked popcorn salt/pepper to taste

Preheat oven to 350 degrees. Brush chicken well with melted butter, salt and pepper. Fill cavity with stuffing and popcorn. Place in baking pan with the neck end toward the back of the oven. Listen for popping sounds. When the chicken's ass blows the oven door open and the chicken flies across the room, it's done.

OMG - thank your for this. I had a really long day at work and I'm reading this with a very serious attitude. Now I'm sitting here with tears in my eyes from laughing so hard. Thanks again - I needed that.

Shortbread Cookies

3/4 cup butter softened
1/2 cup icing sugar
1 1/2 cups of all purpose flour sifted with 1/2 cup rice flour

cream butter and icing sugar and slowly add flour until dough forms. You probably wont need all the flour, I never have yet.

Roll out 1/4 inch thick and cut rounds. I use an upsidedown glass.
Place on a greased sheet and bake for 25 minutes at 325.

makes about 50 cookies that will absloutely melt when you bite them.

Have tried it without rice flour by adding more all purpose and it doesnt come out the same at all. Try if you can to use rice flour. The difference is worth it.

Hi,

I noticed someone asked for an applecrisp recipe and this one is sooo popular here. My sister would have me make this every morning if I had time!

Mix the following in a bowl
1/2 cup flour
1 cup oatmeal
2/3 cup brown sugar
1 tbls cinamin (sp?)
1/2 cup melted butter

pat over apples that have been peeled, cored and sliced and sprinkled with cin. and a little white sugar.

Cook at 350 for 45 min to hour

I'll writing from memory so I hope I didn't forget anything!

Caramel filled Chocolate Cookies

1 Cup butter (softened)
1 Cup white sugar
1 Cup packed Brown sugar
2 eggs
2 Tsp vanilla
2 ½ cups flour
1 Tsp baking soda
¾ cup unsweetened cocoa powder
1 Tbsp white sugar
48 chocolate covered caramel candies

1. Beat butter until creamy. Beat in both sugars and then beat in eggs and vanilla.

2. Combine flour, baking soda and cocoa. Add to butter mixture. Mix well. Cover and let chill 2 hours or about 20 minutes in the freezer.

3. Preheat oven to 375

4. Divide dough into four parts. Work with one part at a time, keep others in the fridge. Divide each part into 12 pieces. Quickly press each piece of dough around a chocolate. Roll into a ball. Dip tops into sugar. Place sugar side up 2 inches apart on ungreased cookie sheet.

Bake for 8 minutes. Let cool 10 minutes on baking sheet before removing to wire rack.

To make them look fancy drizzle white or dark chocolate over the tops of the cookies.

I just made 3 batches of these for a cookie exchange. They are pretty easy to make. The original recipe says to use rolo or reisen candy but I just put one caramilk square in the middle and they turned out great.

Peppermint Patties

1 pound icing sugar
3 Tbsp butter
2-3 tsp peppermint extract
½ tsp vanilla
¼ cup evaporated milk

2 cups semi sweet chocolate chips
2 Tbsp shortening.

1. In a bowl combine icing sugar, butter, peppermint and vanilla. Add milk. Mix well

2. Roll into one inch balls and place on waxed paper lined cookie sheet. Chill 20 minutes

3. Flatten with a glass to ¼ inch. Chill 30 minutes.

4. Melt Chocolate chips with shortening. Dip patties in chocolate, place on waxed paper. Place in fridge or freezer to harden.

Makes 5 dozen.

These are a little fiddly to make and quite messt but they are worth it

I have made these before. Don't have an actual recipe because it is so easy.
Just lightly grease a baking sheet (I Pam it) Arrange 3 pecans in a spoke-type arrangement and place an unwrapped Kraft caramel on top. Place a pan of these in a very low oven (250 F)
and watch until the caramels are melted enough. Take out and cool.
Dip in melted chocolate (1 package chocolate chips with a teaspoon of butter) and place on waxed paper until set.

I think these are called Cowpies:

2c milk chocolate chips
1 tbsp of shortening
* melt together over medium heat until smooth
* remove from heat
ADD:
1/2 c raisins
1/2 c blanched slivered almonds

Stir until coated, drop spoonfuls on waxpaper/saran wrap, chill in the fridge. Seperate each layer for storing.

I made these last night, maybe took 15 min and they are yummy. A more flavorful nut would probably taste better, or maybe some peanut butter......

I have a few different recipes, but I have an excellent gingerbread one if that's the kind of thing you're looking for?
I'll post a few in a minute... just gotta grab my recipe MANUAL

Free Shipping on Orders Over $25 at Indigo!

My Very Favorite Gingerbread cookies (excellent for cutting momof 2 monkeys)

Ingredients:

1 cup packed brown sugar
1/3 cup shortening
1 1/2 cups dark molasses
2/3 cup cold water
7 cups flour
2 tsp baking soda
2 tsp ginger
1 tsp allspice
1 tsp cinnamon
1 tsp ground cloves
1/2 tsp salt

1. Mix brown sugar, shortening, molasses, water. Stir in remaining ingredients.

2. Cover & refrigerate at least 2 hours.

3. Heat oven to 350, grease sheets w/ shortening

4. Bake 10-12 minutes.

***TIP*** If you lightly oil a measuring cup, the molasses comes out A LOT easier.

SUGAR COOKIE CUT-OUTS

Ingredients:

3/4 cup unsalted butter, at room temperature
1 1/4 cup granulated sugar
2 eggs
2 tsp vanilla
2 1/2 - 2 3/4 cups all-purpose flour
1 tsp baking powder
3/4 tsp salt

1. Beat butter with sugar until creamy. Beat in eggs and vanilla.

2. In another bowl, use fork to blend 2 cups flour with baking powder and salt. Gradually stir flour mixture into butter/egg mixture. Do not overmix. If needed, stir in remaining flour 1 tablespoon at a time until dough is soft, but not sticky.

3. Divide dough into quarters, form into balls and flatten, wrap or place in ziploc-type bags. Refrigerate until firm (1 hour or up to 3 days) **this dough also freezes well**

4. Preheat oven to 375. Lightly grease baking sheets. Roll dough until 1/4 inch thick and cut. Bake in center of oven until edges are lightly golden (about 8-10 minutes).

Will keep for about 2 weeks in an airtight container in the fridge or can be frozen.

This is my absolute favorite Christmas recipe (that I didn't make this year, go figure)

SMARTIE SQUARES

Ingredients:

1/3 cup butter (or margarine)
1/3 cup brown sugar
1 cup flour
1 8oz package cream cheese (I find that the light or low fat kind doesn't work as well)
1/4 cup white sugar
1 tsp vanilla
1 egg
3/4 Smarties

CRUST

Beat butter and brown sugar until light and fluffy.
Add flour and mix well.
Hold 1/2 cup of the crumbs.
Press into 8x8 pan
Bake at 350 for 10 minutes (until slightly golden)

FILLING

Blend cream cheese, white sugar and vanilla
Add egg and mix well.

ON CRUST (in order)

1/2 cup Smarties
cream cheese mixture
1/4 cup Smarties
The remaining crumbs.

Bake 350 for 20 minutes
Cut when cold

These are so easy to make but they are absolutely AMAZING!!
I hope you all enjoy them too.

I think it originally came from the Philedelphia Cream Cheese cookbook (probably from 20 yrs ago)
