Chocolate Pudding!!



3/4 cup sugar
1/4 cup cornstarch
3 tbsp. cocoa

Mix together in a pot.

Add 2 3/4 cup cold milk and bring to boil over medium heat.
Stir in 1 tsp. vanilla, 2 tbsp. butter.

Enjoy!!

Cheese Meatloaf!!

1 1/2 lb. hamburger
1 egg
1 1/2 cup bread crumbs
1 8oz can tomato sauce
1 cup shredded cheese
1/2 cup chopped onion
1/4 cup green pepper
1/2 tsp. thyme
1/2 tsp. salt and pepper

Mix all ingredients. Spread mixture into loaf pan. Cover with wax paper. Cook 23 to 29 minutes. Let sit 5 minutes before serving.

Recipe for Christmas Joy

1/2 cup Hugs
4 tsp Kisses
4 cups Love
1 cup Special Holiday Cheer
1/2 cup Peace on Earth
3 tsp Christmas Spirits
2 cups Goodwill Toward Man
1 Sprig of Mistletoe
1 medium-size bag of Christmas Snowflakes
(the regular kind won't do!)
Mix hugs, kisses, smiles and love until consistent. Blending holiday cheer,
peace on earth, Christmas spirits and good will toward men.
Use the mixture to fill large warm heart, where it can be stored for a lifetime,
(it never goes bad!). Serve as desired under mistletoe,
sprinkled liberally with special Christmas Snowflakes. It is especially good
when accompanied by Christmas Carols and family get-togethers.
Serve to one and all.

On her site she has a ton of chili recipes..this one is good ( pretend it is all Canadian!!):

ALL AMERICAN CHILI


Adapted from Bush Brother's & Company

10 servings

1 lb ground chicken breast, skinless 11 ozs canned corn, drained
1/2 c onions, chopped 6 ozs tomato paste
1/2 c bell peppers, chopped 1/2 c water
32 ozs canned dark red kidney beans, undrained 3 tsps chili powder
14 1/2 ozs stewed tomatoes, diced and undrained 1 tsp salt

In a stockpot, cook chicken, onions, and bell peppers until chicken is no longer pink. Stir in beans, tomatoes, corn, tomato paste, water, chili powder, and salt. Mix well and bring mixture to a boil. Cover and reduce heat and simmer for 25 minutes.



Nutritional Analysis per serving (10 servings total)
Calories 196 Total Fat 2 g
%CFF 9 % Cholesterol 26 mg
Protein 18 g Sodium 588 mg
Carbohydrates 25 g Fiber 7 g


To make it less spicy I use regular canned tomatoes instead of stewed and less chili powder.

I use to live in Middle LaHave and worked in Lunenburg at star Charters on the waterfront.

Living in the big city (lol) of Halifax now and going to SMU.

Really miss the LaHave though, not much for my two year old to do here that doesn't cost $$$. But the parks are great.

I love peppers in any shape and colour so here is one of the ways I like to cook them :

GREEN PEPPER SALAD

This is a Romanian dish which is also featured in Middle Eastern menus. Israeli green peppers are known for their sweetness.

4 large green peppers
1/3 cup vegetable oil (I preffer virgin Olive oil or Sunflower Oil)
2 tbs. lemon juice (or vinegar)
2 garlic cloves, minced (not mandatory)
salt and pepper to taste

Preheat oven to 400 deg F (210 deg C). Place whole peppers on a flat baking tray and roast, turning often, until skin is soft. Remove from oven and peel. Remove seeds and cut peppers into strips. In a non-metal dish, mix oil, lemon juice and garlic. Stir in pepper strips, season with salt and pepper, and chill.

P.S. I usually use White wine vinegar instead of Lemon juice

Hey there ibhuff I just got caught up with this thread.
I add 1/2 cup of peanut butter after the boiling step and skip the cocnut. It is absolutely fabulous. You may want to try it.
