makes 6 to 8 servings
4 tbsp. Butter, melted, divided
1 pound medium size whole mushrooms
1 tsp. salt
1/4 cup finely chopped onion
2 (10oz.) pkg. frozen chopped spinach, thawed and drained
1 cup shredded cheddar cheese, divided.
Garlic-to taste

Preheat the oven to 350F. Place 2 tbsp. of the butter in a large skillet over medium heat. Add the mushrooms and cook until browned, browning the cap sides first. Stir the salt, onion and remaining 2 tbsp. butter into the spinach. Line a 10 inch casserole
with the spinach mixture. Sprinkle 1/2 cup of the cheese over the spinach. Arrange the browned mushrooms over the cheese; season with the garlic salt and top with the remaining 1/2 cup of cheese. Bake for ten minutes. serve hot.

Caramel Pecan Brownies

Ingredients
4 squares Unsweetened Baking Chocolate
3/4 cup (1-1/2 sticks) butter or margarine
2 cups sugar
4 eggs
1 cup flour
1 pkg. (14 oz.) Caramels, unwrapped
1/3 cup whipping cream
2 cups Pecan Halves, divided
1 pkg. (12 oz.) Semi-Sweet Chocolate Chunks (optional)

Preparation
Line 13x9-inch baking pan with foil, extending over edges to form handles. Generously grease foil.

Microwave unsweetened chocolate and butter in large microwavable bowl on HIGH 2 minutes or until butter is melted. Stir until chocolate is completely melted.

Stir sugar into chocolate mixture until well blended. Mix in eggs. Stir in flour until well blended. Spread 1/2 of the brownie batter in greased 13x9-inch baking pan.

Bake at 350°F for 25 minutes or until batter is firm to the touch.

Meanwhile, microwave caramels and cream in microwavable bowl on HIGH 2 minutes or until caramels begin to melt. Stir until smooth. Stir in 1 cup of the pecan halves. Gently spread caramel mixture over baked brownie batter in pan. Sprinkle with chocolate chunks. Pour remaining unbaked brownie batter evenly over caramel mixture; sprinkle with remaining 1 cup pecan halves. (Some caramel mixture may peak through.)

Bake an additional 30 minutes or until brownies feel firm to the touch. Cool in pan. Run knife around edges of pan to loosen brownies from sides. Cut into 24 squares.

Almost Free Playdough - Scented (or not)

1 cup cold water
1 cup all purpose flour
1/2 cup salt
1 Tablespoon vegetable oil
2 teaspoons cream of tartar
food colour OR unsweetened Koolaid

Either add food colour to the water in the pan before adding the flour, salt veg. oil and cream of tartar or pour in a packet of unsweeteened Koolaid. I like using Koolaid because the colours are intense and it smells so yummy.

Put everything in a saucepan. Mix it all together with a wooden spoon. Heat it 1 - 3 minutes over medium heat, stirring constantly. It forms a ball when done.

Let it cool a bit. Knead it once or twice and turn it over to the kids or store in an airtight container for later use. I store it in the fridge but its probably not necessary to do so.

This is fast, easy and inexpensive. I make it often. I've seen alternate recipes which increase the oil to 2 Tablespoons and the cream of tartar up to 2 Tablespoons but I think this recipe is nice and silky as is.

The house rules are that this is used only in the kitchen over lino because I don't want to find out how tough (or easy) it may be to get out of carpet.

QUICK EASY AND YUMMY TOFFEE BALLS

3 McINTOSH TOFFEE BARS

1 CUP COCONUT
1-1/2 CUPS RICE KRISPIES
A BIT OF FINE COCONUT FOR ROLLING

MELT McINTOSH BARS AND MILK IN DOUBLE BOILER.ADD THE 1 CUP COCONUT AND RICE KRISPIES.ROLL INTO BALLS AND ROLL IN FINE COCONUT.KEEP IN FRIDGE.MY GUYS LOVE THEM.

MMMMMMM yummy stuff heres another

Two Hour Buns
3 cups warm(not hot) water
1/2 cup sugar
2 tbsp yeast
mix water and sugar together and sprinkle yeast ontop when yeast is foamy
Add:
6 tbsp veg oil
2 well beaten eggs
dash of salt
7-9 cups of flour
mix altogether until stiff. dump out on table and kneed until a smooth elastic consitency.
oil bowl lighty and place dough in oiling the top cover with plastic to keep in warmth
let rise 15 min 4 times on the 4th time shape into buns(let your kids help you get all sorts of weird shapes) and place on lightly greased cookie sheet . melt 2 tbsp of margerine and brush the tops of each. cover with plastic and a teatowel and let rise for 1 hour. Ilet mine rise ontop of the stove with the oven on at 200 to help quicken things up.
preheat oven to 350 and bake for 15-20 min or until brown. brush with marg and enjoy.
they freeze great if you can get them there

Here is a real quick and easy one

Salt and Pepper Chicken Legs

Generously sprinkle chicken legs and thights(Skin on) with salt and pepper and bake at 350 degrees for 50min -1 hour. One of my familys favorite ways to have chicken(the other is shake and bake)

this is a favorite in my family . wacky cake.3 cups of flour ,2 cups of sugar , 2 tsp baking soda , 1 tsp salt , 6 tbsp cocoa . mix dry ingredents together ,make three holes and add:2 tbsp vinegar ,2cups of water ,12 tbsp oil . mix together using a spoon ,not an electric mixer . do not over stir. there may be a few lumps .bake at 350 in a 9 by 13 pan for 40 min.

My mother in law always makes this. The ingredients sound like a gross combination and it even looks kind of gross but the taste is fabulous and it is even better the second day.


1 pound lean ground beef

Add your favourite hamburger additives and brown
(I like to add chopped onion, salt, pepper , one egg and some bread crumbs or cracker crumbs to help them stick together)

Put into medium pot or slow cooker:
1 can condensed cream of mushroom soup
1 can chopped tomatoes (you can also used fresh tomatoes if you like)

Mix together and add meatballs. Simmer for 1-2 hours stirring occasionally.

Server with spaghetti.

SEX IN A PAN

Ingredients

1 PACKAGE (MEDIUM SIZE) CREAM CHEESE
½ CUP ICING SUGAR
1 LRG TUB COOL WHIP
1 PACKAGE BANANA, VANILLA OR BUTTERSCOTCH
PUDDING
1 PACKAGE CHOCOLATE PUDDING
3 CUPS GRAHAM CRACKER CRUMBS
½ CUP MARGARINE
CHOPPED PECAN BITS
½ CUP BROWN SUGAR
1 JERSEY MILK BAR

Directions

· COMBINE GRAHAM CRUMBS WITH BROWN SUGAR AND MELTED MARGARINE
· PAT DOWN MIXTURE IN A 9 x 12 PAN
· BEAT CREAM CHEESE WITH ICING SUGAR AND SPREAD MIXTURE OVER GRAHAM CRACKER CRUST
· PREPARE CHOCOLATE PUDDING. POUR OVER CREAM CHEESE MIXTURE (LET PUDDING SET BEFORE PROCEDING)
· PREPARE SECOND PUDDING. POUR OVER CHOCOLATE PUDDING (LET PUDDING SETTLE BEFORE PROCEDING)
· SPREAD COOL WHIP OVER SECOND PUDDING LAYER
· GRATE JERSEY MILK BAR OVER TOP
· SPRINKLE WITH PECAN PIECES
· REFRIGERATE FOR 1 HOUR

NOTES

** It is advisable to refrigerate the graham cracker crust before adding the cream cheese layer.**
** I usually increase the amount of cream cheese to 1 ½ packages because I find that 1 package is difficult to spread without ruining the crust.**

Best ever rice crispie squares
pre heat oven to 350degrees

1/2 cup margarine
400 g bag marshmallows
1 tsp vanilla
8 cups rice krispies
1 1/2 cups milk chocolate chips

In a large dutch oven melt margarine then add marshmallows when marshamallows almost melted take off heat and add vanilla. Continue stirring till marshamallows completely melt then add rice krispies. Scrape mixture into a well butter 9 x 13 pan. Coat a large piece of wax paper with margarine and use to flatten rice krispies. Sprinkle top with chocolate and put in oven for about two minutes until melted then spread them around like icing. Cool then enjoy.
